Lechon
Lechon is spit-roasted pig, with the entire pig roasted. This slow cooking technique results in very tasty meat and super crunchy skin with glistening fat underneath. It is a must-have at town fiestas and grand family gatherings as a symbol of prosperity. In La Loma, Quezon City, specifically across the cockpit, there is a lechon district where you will find streets and streets of these spit-roasted pigs. In the year 2000, former Mayor Feliciano Belmonte, Jr. supported the initiative for an annual Parada ng mga Lechon (a festival with a parade of lechon) and declared La Loma the official Lechon Capital of the Philippines.
